Hi Kelly. A few months ago I bought the Jessica Seinfeld cookbook Deceptively Delicious. I made a bunch of her purees and froze them. I think I deceived myself into thinking I would add puree to everything, but that's another post.
I had a lot of buttermilk left over after making the Smitten Kitchen's divine buttermilk dressing. Why can I never find a small bottle of buttermilk? Anyway, there is a delicious frozen yogurt recipe in Deceptively Delicious that calls for buttermilk, so I made a huge bowl yesterday.
The only thing about this recipe is that it is so tasty that I just go ahead and eat it after I make it - so I guess technically it is yogurt soup. Erin loves it this way too.
I make it with low-fat plain yogurt and low-fat buttermilk so it really is a health food when you think about it, and more fun than taking a calcium supplement. I also use the pale beige organic sugar which gives it more depth of flavor.
The recipe is deceptively simple.
Ha! I am so funny!
2 cups plain yogurt
1 cup buttermilk
1 cup organic sugar
2 tbsp. lemon juice
Grated peel of 1 lemon
Stir well and freeze to whatever
consistency your patience will allow.
